Here in Oklahoma we’ve had a reprieve from the hot weather for the last month and a half. Usually we’ve already been in the nineties by the middle of May. We’ve been super luck that the really hot weather is just now getting to us. With that in mind it’s time for me to start thinking of more warm weather friendly suppers. Here at our house that means one of five things. We have breakfast for dinner, cooking on the grill so as not to heat up the house, lots of fresh filling salads, and finally lots of sandwiches.

I went with the salad option last night since we official broke ninety degrees yesterday. This one is one of my favorites, it’s so cool and refreshing. I could eat the entire bowl by myself.

This recipe makes about four, one cup servings. So if you’re playing on using it to feed a crowd you may want to double or triple the recipe.

Ingredients 

1 cucumber

1-2 cups cubed watermelon

3 tsp lime juice

4-6 Tbs feta cheese crumbles

1/4 tsp salt and pepper

Preparation

Peel and cube cucumber, combine all ingredients into a container with a lid. Shake container to combine ingredients. Chill for at least an hour before serving.
